Our History

GastrÖ is a small business with a great passion for gastronomy. We are well-established at Ragnhilds Gaard, a historic gem in the heart of Nyord town.


GastrÖ is run by the couple Rasmus and Lissa Theilsborg.

Rasmus is a trained chef with several years of experience, both locally where he developed his knowledge of local ingredients and their potential as head chef at Villa Huno; and at Vejrø Resort where sustainability and the ultra-local are in focus. However, his professional roots took hold at Nyord in 2013, so it was not difficult to return when the opportunity arose 11 years later.
With the dream of creating an oasis for food lovers, Ragnhilds Gaard became the perfect location and destination.

Lissa is a trained elementary school teacher, but with an upbringing in the restaurant industry and Jutland farmstead ancestry, it was not difficult to follow Rasmus' ambitions. There is still ample opportunity to convey, because the farm's story begins in the 18th century and has survived fire and war, and stands to this day as a representative of Nyord's business history.

In addition to GastrÖ, we also manage the hostel Ragnhilds Gaard, which is located in the adjacent wing of the farm.

In the kitchen

Our kitchen is all about creating magic with food. We believe that honesty, passion and an eye for detail are the keys to creating exceptional taste experiences. Our approach to cooking is based on respect for traditional methods combined with innovative creativity, based on the ingredients that the season offers.
We often collaborate with the island's residents and have the raw materials delivered over the garden gate.

Our Nyord

 

Nyord lies like a wedge between Bøgestrømmen to the north and Stege Bugt to the south, only connected to the outside world via a small bridge towards Ulvshaleskoven on Møn. The trip out here is adventurous and offers primeval forest, peaceful cattle and an incomparable meadow area that seems endless. On a clear day you can see Stevns, as well as the starry sky is undisturbed at night.

We have both worked on Nyord before, and this is where the love for the local community, the locals and everything in between grew. The sky is high here, and the island's permanent residents have given us a warm welcome. It has not been difficult to feel at home, and for our children it has also been a heartfelt reunion.
